Things at my house have been busy lately. Real busy.
In the midst of planning my upcoming June wedding, at times it feels hard to keep my head on straight with all the things I want to accomplish. I've found that balancing family, my business, nutrition, health, school, dance, and a bazillion DIY projects can be a little daunting. (Side note, I'm working on sharing some details of planning my DIY bohemian wedding, stay tuned!). Even when things are busy, I focus on keeping my diet clean using fresh nourishing ingredients - even when it comes to treats.
My daughter, like most kids, can be a picky eater. I am constantly trying new recipes and ways to sneak some extra goodness into her diet. I myself try to stick to a Ketogenic diet (low carb, high fat macro diet), so trying new food combos & recipes is a must to mix it up! The kitchen is my happy place, and it makes me even happier to include Mackenzie in the process!
Today we were craving something sweet after our trip to APEX trampoline park. So we decided to make whipped cocoa pudding - with star ingredient - Avocado! This treat is not only healthy but packed full of healthy fats after burning some energy, and it's pretty dang delicious.
MY RECIPE (You can totally sub in or out other ingredients to suit your taste buds)
1 ripe avocado
1 ripe banana
1/2 cup organic cocoa powder
1/4 cup organic coconut milk
1 tbsp vanilla extract
1 tsp pink sea salt
Throw all ingredients into your food processor and whip on high, scraping sides occasionally, until your pudding is light and fluffy! Wa-La!
