These anti-inflammatory ginger cookies are super healthy! Sugar free, gluten free…yet still delicious.
1/2 cup almond butter
2 tsp cinnamon
2 cups almond flour
1 tbsp ground flax meal
6 tbsp unpasteurized liquid honey
1 tsp pure vanilla extract
as desired - slivered almonds for decoration
Preheat oven to 350 F. Place all ingredients in a bowl and stir to thoroughly combine. Roll the dough by hand into 1-inch balls and lightly press down with a fork. Decorate with slivered almonds.
Place the cookies on a baking sheet lined with unbleached parchment paper (use parchment paper...we didn't and regretted it because the bottoms burned just a bit). Bake 10-12 minutes or until golden. The cookies will crisp as they cool. Store in an airtight container.
