Grandma Geneva's Ginger Cookies

Today's post is brought you to by "master cookie monsters" Lisa Landrie & Susan Busse

These anti-inflammatory ginger cookies are super healthy! Sugar free, gluten free…yet still delicious.

Ingredients:

1/2 cup almond butter

2 tsp cinnamon

2 cups almond flour

1 tbsp ground flax meal

6 tbsp unpasteurized liquid honey

1 tsp pure vanilla extract

as desired - slivered almonds for decoration

DIRECTIONS:

Preheat oven to 350 F. Place all ingredients in a bowl and stir to thoroughly combine. Roll the dough by hand into 1-inch balls and lightly press down with a fork. Decorate with slivered almonds.

Place the cookies on a baking sheet lined with unbleached parchment paper (use parchment paper...we didn't and regretted it because the bottoms burned just a bit). Bake 10-12 minutes or until golden. The cookies will crisp as they cool. Store in an airtight container.

Blanch the almonds in boiling water for 60 seconds.

Now this is where shit gets real. One by one, squeeze the skin off each individual almond. Seriously.

Once almonds are cooled, grind them in your food processor.

Blend 'til fluffy (but not too much or it could turn into almond butter).
