I pack a lot of lunches. And I haven't figured out that you can avoid LOADS of stress if you pack the night before... don't get me started. But, I am always hurriedly throwing pre-made granola bars into my kiddos lunches. If I'm not going to prepare in advance, which I'm not, it's time to start baking...

Here's my first try: 2 1/2 cups oats (they recommended quick cook, I didn't have any. In hindsight I should have taken their advice), 1/2 c coconut, 1/2 c raisins, 1/2 c honey (NuBee premium honey to be exact), 1/2 c coconut oil (melted), 1/2 c crispy rice, 1/2 c brown sugar.
Now, they were a tad fall aparty, is that a word? Anywho, I think if I'd used quick cook rather than thick rolled oats they would have been perfect. They are awfully yummy though.
Ask a little helper to mix it up for you.
And then 'hand wash' the dishes
Bake at 350 for 20 mins. Also tastes great in a bowl with yogurt.
Seriously, I cannot keep my hands away from these, bon appetite!
