Patio season is upon us {hallelujah! am I right?}. Finally the days are getting longer, the sun is getting hotter, and fashion little saucier. On a hot Friday (or Monday through Sunday...) there's nothing better then unwinding from the work week with your girlfriends, and why not do that over a sweet summer cocktail?

When I'm not with my tiny fashionista 3 year old, traveling, or taking photos of beautiful people, my favourite past time is cooking vegetarian/vegan eats. All though these cocktails aren't "cooking" I did play around with some easy recipes to make some {semi} guilt free fruit cocktails perfect for summer sipping!

 


 

Grape Fruit Mojito

1 grapefruit, segmented & juice reserved
20 mint leaves
4 teaspoons agave nectar
juice of 1 lime
1/4 cup + 2 Tablespoons reserved grapefruit juice
3oz rum (2 shots)
ice
sparkling water

 

To me, mojitos scream summer.

This is a sweet & tart twist on the classic. 

Segment your grapefruit into a bowl.

In a cocktail shaker add fresh mint leaves, agave syrup, and muddle.

Next, add grapefruit and rum and shake it up!

Pour into a tall glass over ice and top it off with sparkling water.

Enjoy!

 

 

Watermelon Cucumber Cooler

5 cups cubed seedless watermelon 

1 large English cucumber, peeled and cut into chunks

1/4 cup fresh lime juice (from 2 limes)

2 tablespoons honey

2/3 cup vodka

Ice

 

 

If you haven't ever had a cucumber and watermelon juice, you are seriously missing out. I am addicted... so what could make a cucumber and watermelon juice better? Vodka, of course.

In your blender, add watermelon & cucumber and puree. Over a jug pour the mixture through a fine sieve, squeezing out all the juice. Next, add your favourite vodka, lime juice, a touch of honey, and pour over ice. Garnish with cucumber slices. ahhh!

 

 

 

 

 

Strawberry Vino Slushie 

2 and a half cups strawberries

1 bottle of white wine of your choice

1 tablespoon fresh lime juice

1 table spoon agave syrup

 

 

 

In your blender add 3/4th's the bottle of wine, strawberries, agave and lime juice and blend. 

Pour into ice cube trays and freeze. Once  frozen, add the cubes back into the blender with the remaining wine and blend until you have the perfect iced slushy.
