… it's raining… lets bake!

I couldn't garden this raining weekend… so went to visit my friend Gina (Gina's Portraits) in the country and bake… seeds on hold for a fantastic garden… planting next weekend… this is what we did!  My favourite gardening bag is from Filson!

Gina's Chocolate Zucchini Cake

1/2 cup butter       1/2 cup oil      1 3/4 cup sugar      2 eggs      1 tsp vanilla     1/2 cup sour milk

mix well….  next… sift together….

2 1/2 cup flour     4 tbs cocoa     1 tsp baking soda     1/2 tsp baking soda    

1/2 tsp cinnamon  1/2 tsp cloves

add 2 cups grated fresh zucchini…. yummmmmm

add dry ingredients to  butter mixture alternating with milk… add zucchini… put in 12x9 inch pan that is butter and floured…. sprinkle with chocolate chips!!!   Bake at 350 degrees for 40 minutes…  you will have the best, moist chocolate cake EVER!

slice  the vanilla bean down the middle and scrape out all the goodness!

Best Fresh Whip Cream with Fresh Vanilla

1 medium container of whip cream….. mix on blender on medium until starting to get stiff… add 1/2 cup sugar and then add the seeds from a fresh vanilla bean…..  

top with finely grated good chocolate….
