tasty treat for chocolate lovers

So our lovely neighbours had brought over this treat for us to celebrate the holidays. It happened to be about an hour after we got home from the hospital with Enver. So chocolate + nursing babies does NOT go so well. So i only had one piece, but it was truly glorious.

SO.... here' s the recipe for the above crack.

Almond Roca (AKA Christmas Crack)

-butter ( do not use margarine)                                                1 lb/454g

-granulated sugar                                                                      2 cups/450ml

-water                                                                                         1/4 cups/60ml

-corn syrup                                                                                 2 tbsp/30ml

-toasted, slivered almonds *                                                      1 1/3 cups/300ml

-semisweet chocolate baking squares- cut up                          4 x 1oz/4x28g

-toasted, slivered almonds, finely chopped*                              2/3 cups/300ml

melt butter in heavy saucepan over med-low heat. Add sugar. stir to dissolve. stir in water and corn syrup. cook over low heat, stirring often but gently, until candy thermometer reads 290 degrees f (142 degrees c) be patient, this will take 30-40 minutes. (BUT SO WORTH IT)

add first amount of soldered almonds. pour into greased 10x15" (25x30cm) jelly roll pan about 1/4" (6mm) deep. let cool (if you don't own jelly roll pan, we just used a deep cookie sheet- same idea)

melt first amount of chocolate squares in saucepan over lowest heat, stirring often. Cool until you can hold your hand over hand on saucepan but pan feels hot. spread over candy

sprinkle with 1/2 remaining chopped almonds. wait until chocolate hardens. cover with waxed paper. Place another pan on top. invert. Melt second amount of chocolate squares in saucepans over lowest heat. cool until you can hold your hand on saucepan, but feels hot. spread over candy. sprinkle with remaining chopped almonds. allow to harden. (we let ours sit over night) break into pieces to serve and to store. makes 2.5lbs

*to toast almonds, spread on baking sheet. bake in 350 degree f (175 degree c.) oven for 5-8 minutes until lightly browned.
